  Part One Chinese Food

G: Excuse me, can you tell me something about the Chinese food? I have no idea about the Chinese food.

W: Well, Chinese food is mainly divided into four big cuisines, that is, Guangdong cuisine, Sichuan cuisine, Shandong cuisine and Jiangsu cuisine.

G: I wonder if there is any difference between them.

W: Yes. Generally speaking, Guangdong food is light and clear, while Sichuan food has a strong and hot taste. The Shandong food is heavy and spicy, and the Jiangsu food is spicy but not greasy.

G: I see, but what are your recommendations?

W: Which type of dishes do you prefer, light or spicy ones?

  G: I don't have any particular taste.

W: If that's the case, I'd like to suggest you taste a selection of the specialties of all the four cuisine. You may try Whitebait Fish Soup, and Mandarin Fish Shaped as Squirrel, which are typical of Jiangsu food; Suckling Pig Combination and Beef Fillet in Oyster Sauce which are Guangdong style; Chicken Dices with Peanuts and “Mapo” Beancurd, both of which are typical Sichuan food, and Birds Nest in Consumme which is Shandong style.

G: Great. I'll have them all. Would you kindly arrange one green vegetable?

W: Yes, I'll suggest Fried Spinach to you. It's in season.

G: Thank you. So you've ordered Whitebait Fish Soup, Mandarin Fish Shaped as Squirrel, Suckling Pig Combination, Beef Fillet in Oyster Sauce, Chicken Dices with Peanuts and “Mapo” Beancurd, and Birds Nest in Consommé。 For your information, it takes about 15 minutes for the first course to be served. While waiting, why not try “Sun Rise”, a non-alcoholic drink recommendation of our hotel?

  G: OK. One for each.

W: Yes, that's six Sun Rise. A moment, please.

  Part Two Chinese Restaurant Service

C: Good evening. May I take your order now?

  G: Yes.

C: “Liangxi Crispy Eel” is a Wuxi specialty. It's crisp and savory. It's tasty and worth a try.

  G: OK, we'll take one.

C: How about the “Quick-boiled White Shrimps”? The white shrimp is a specialty from the Taihu Lake. Would you try one?

G: Yes, please. Any other local specialties you could recommend?

C: Yes, what about a “Wuxi Pork Spare Ribs”, “Steamed White Fish”, “Whitebait Fish Soup with Egg Flakes”, “Wuxi Pork Ravioli”, and “Stir-fried Greens with Gluten”?

  G: We'll take them all.

C: Yes, sir. So that's one “Liangxi Crispy Eel”, one “Quick-boiled White Shrimps”, one “Wuxi Pork Spare Ribs”, one “Whitebait Fish Soup with Egg Flakes”。

  G: Yes, that's enough.

C: How about a fruit combination?

  G: No, thanks.

G: While you are waiting, may I suggest a drink for you?

  G: No, thanks.

  C: 0ne moment, please.

  C: Excuse me, here's the “Quick-boiled White Shrimps”。

G: All the dishes are tasty. But we are full now. Can you cancel the Pork Ravioli please?

C: 0ne moment, please. I'll check with the chef right now.

Excuse me, sir. The Pork Ravioli is being steamed now and will be ready in a minute.

G: A11 right, but can you pack them for me so that I may take them back?

C: No problem. Here is the Pork Ravioli.

  G: Thank you.

  Part Three Ordering Drinks

C: What drinks would you care for, sir?

G: Can you tell me some of your famous brands of beer?

C: We serve Carlsberg, Heineken, San Miguel, Kirin, Foster, Guiness Stout and Budweiser. For home brand, we have Tsingtao and Taihu beer.

G: Two Heinekens and one Taihu beer.

C: We serve Heineken and other imported beer by the can and Taihu beer by the bottle.

G: We don't care. What we care about is that all the beer must be cold.

C: Yes, sir, chilled beer. Would you like to try Dynasty Wine which is in promotion now?

G: We don't drink wine at lunch time.

C: What about some soft drinks for ladies? We serve cucumber juice, orange juice, carrot juice and tomato juice. All of them are spot-squashed.

G: Yes, please spot-squash four glasses of carrot juice.

C: I suggest a jug of juice instead of four glasses of juice. The price of 5 glasses is equal to that of one jug. The content of a jug is equal to that of six glasses.

G: That's a great idea, one jug of carrot juice.

  Part Four Serving the Dishes

C: Sorry to have kept you waiting, sir. Here's your Whitebait Fish Thick Soup.

  G: It's delicious. What's this?

C: It's whitebait fish from the Taihu Lake.

G: Ah, the fish is boneless and transparent.

  C: Yes, and it's nutritious.

  …

Excuse me, here's the Instant-boiled White Shrimp. Please enjoy yourselves.

G: Thank you, but the shrimp is a bit too small.

C: Well, the white shrimp does not grow very big. The white shrimps at this size are just nice to eat.

G: I see. Yes, it's very tender and tasty.

C: Your Wuxi Spare Ribs. It's typical of Wuxi.

G: Perhaps you are mistaken. We haven't ordered the dish.

C: (After checking the captain order) Sorry, sir. I'll take it away.

G: 0ne moment, is it typical of Wuxi? Now that it is served on the table, we might as well take it. Just put it on our account.

  C: Yes, thank you.

  …

And Fried Romaine Lettuce with Garlic Mince. This is the complete course, and a dim sum to follow.

G: There might have been a mistake. What we ordered is Romaine Lettuce with Oyster Sauce.

C: Terribly sorry, sir. I do apologize for this. I'll change it right away.

  …

This is the Romaine Lettuce with Oyster Sauce. And the Wuxi Pork Ravioli.

  G: Thank you.

C: Would you like anything else?

G: No, thanks. We are full.

C: This is the fruit combination. It's on the house.

  (The guests finish the dinner.)

  I hope you've enjoyed yourselves.

G: Yes, we have. We're leaving now and we'll be back next time.

C: Thank you. Please see to it that your belongings are with you.
