  Part One Signing the Bill

  G: My bill, please.

C: Yes, sir. How would you like to make the payment?

G: Sign it to my room.

C: Yes, sir. A minute, please. Here it is, sir. (The waiter presents the bill with the folder.)

G: May I look at your key and hotel passport?

  G: Here they are.

C: (The waiter checks the name, room number and signature carefully, and does not find anything wrong.) Thank you. I hope you've enjoyed your dinner.

Part Two Paying with Credit Card

G: Could I have the check, please?

C: Yes, sir. A check for each or a check for all?

  G: A check for all.

  C: Here it is, sir.

  G: How much?

C: That amounts to 690 yuan.

G: How much is that in US dollars?

C: Let me see. It is 85 US dollars at today's exchange rate.

G: I see. Can I pay by American Express?

C: Certainly, sir. May I have a print of your card, sir?

  G: Here you are.

C: Would you please sign here? (The guest signs his bill in the card) Thank you. Here are your bill and receipt, Mr Brown. Have a nice day.

G: Thank you, and the same to you.

  Part Three Explaining the Bill

G: Get me the check, please.

C: Yes, sir. Will these be on a separate check?

G: It's my treat. Put them together.

C: Just a moment, please. (He unfolds the check folder and the guest goes over it.)

  G: What's this for?

  C: It's for the Martel X.O……

  G: I see. And what's this for?

  C: That's for the Carlsberg.

G: We've had only five cans, and you put six here.

C: Excuse me a minute, I'll double check it. (He checks with the cashier and bartender.)

Sorry, sir. We've got miscalculation here. One of the beer should have been cut down from your check.

G: And what's the sundry for?

C: That's for the glass broken in the restaurant.

G: (The guest settles the check in cash.) Give me the receipt.

C: Yes, sir. I will. (The waiter presents the folder with the change and the receipt in it.)

Excuse me, sir. Here're the change and the receipt.

  G: Thank you.

  C: I hope you'll come back again.

  G: We will.

Part Four Explaining the Credit Limit

  G1: Hello, waiter!

C: Yes, sir. Can I help you?

  G1: The bill, please.

C: One bill or separate bills?

G1: Two separate bills, each for three tables.

C: Yes, sir. How would you like to settle the bill?

  G1: I'll sign my bill.

G2: Can I pay by credit card?

C: Yes, of course. (The waiter gets the two separate bills and presents them to the guests. Guest A signs the bill and returns it to the waiter. Guest B gives him the Million Card.)

Sorry, sir. But we don't accept Million. (The waiter gives the card back to the guest in a professional way.)

G2: Do you accept Visa Card then?

  C: Yes, sir.

  G2: Here you are.

C: Do you have another card?

G2: Yes, but it's not with me. Why?

C: The credit limit set by the Visa Card office is 1,000 US dollars. We need their permission to extend credit over that amount. Would you kindly settle the difference in cash?

G2: Well, if that's the case, I think I might as well make all my payment in cash.

C: Thank you, but we don't accept US dollars in this restaurant. I'll change it for you at the front cashier if you don't mind.

  G2: I'll appreciate that.

C: According to today's exchange rate, one hundred US dollars is equivalent to 820 RMB.

  G2: A11 right.

C: Excuse me, sir. Here're the change and the receipt.

  G2: Keep the change.

C: No, thank you, sir. But we don't accept tips.

  Restaurant Bills

A triplicate captain order should be written, with the original copy to the cashier for recording on the restaurant check, and the second copy to the kitchen or bar after being stamped by cashier. The third copy is kept by the waitress. The guest check is presented upon request. The guest will be given the original copy of the bill for his signature and the original will be retained by the hotel. If the guest insists on having a copy, a photocopy of the bill will be given.

When returning changes, close the check folder and return to him by hand. Never stand there to wait for gratuity. Smile and thank him after presenting the check folder with a copy of the bill. Always double check the billing and make necessary changes before presenting the bill to the host.
